Cheesy Cauliflower Bread

2 large eggs

2 cups riced cauliflower

2 cloves garlic, minced

1/2 teaspoon oregano

3 cups Mozzarella cheese, shredded. divided

3/4 cup Parmesan cheese, grated

1 teaspoon salt

1/2 teaspoon pepper

1. Preheat oven to 425F.

2. Line a baking sheet with parchment paper.

3. Beat eggs, then add riced cauliflower and mix well.

4. Add garlic, oregano, 1 cup Mozzarella cheese and Parmesan cheese. Season with salt and pepper. Mix to combine all ingredients.

5. Transfer dough to prepared baking sheet and pat into a loaf. Bake for 20-25 minutes.

6. Sprinkle with remaining Mozzarella cheese and bake until cheese is melted, 5-10 minutes more.

7. Slice and serve.
