8 eggs
2 cup sour cream
1 cup shredded Cheddar cheese
1 green onion, minced
1/4 cup fresh parsley, chopped
1 cup of frozen corn kernels
1 15-oz can black organic beans, rinsed and drained
1/2 cup red pepper, chopped
1/4 cup bacon bits
1 cup fresh salsa
1. Preheat Oven to 350 F. Lightly grease a 9″ x 13′ baking dish.
2. In a large bowl, whisk together the eggs, sour cream, Cheddar cheese, green onions and parsley. Mix in the corn, black beans, red pepper, and bacon bits.
3. Transfer to the prepared baking dish. Bake 30 minutes in the preheated oven, or until a knife inserted in the center of the casserole comes out clean.
4. Serve with fresh salsa.
