3 cups rolled oats
2 cups chopped nuts and /or seeds
1 teaspoon cinnamon
1/4 cup coconut oil
1/3 cup maple syrup
1 tablespoon pure vanilla extract
1. Preheat the oven to 300 F . Line baking sheet with parchment paper.
2. In a large mixing bowl, add the oats, nuts, seeds and cinnamon. Stir.
3. In a small bowl, microwave safe bowl, add the coconut oil and microwave until melted, about 1 minute. Add the maple syrup, whisk to combine, add in microwave again until warm, about another minute. Add the vanilla extract and whisk to combine.
4. Pour the wet ingredients over the dry ingredients in the bowl and stir until all the oats, nuts and seeds are completely covered. Then spread the mixture onto the prepared baking sheet. Spread out in one thin and even layer. Place in the oven and bake until the edges of the granola are just beginning to color, about 25-30 minutes.
5. Allow the granola to cool entirely before breaking it up into smaller pieces.
*Note: The granola will get crunchy as it cools. Store in an air tight container until ready to serve or enjoy immediately.
