Lemon-Thyme Popsicle’s

4 cups water

1 cup sugar

2 large bunches fresh thyme

2 cups freshly squeezed lemon juice

1. In a saucepan, combine 1 cup of the water and the sugar, and cook over medium heat until sugar is dissolved. Add the thyme to the pan and let cook for 2 minutes. Remove pan from heat and allow syrup to cool.

2. When the mixture cools, remove the thyme.

3. Combine thyme-infused syrup, lemon juice and 3 cups of water in a food processor or blender. Blend until thoroughly combined.

4. Pour mixture into popsicle molds, freeze for 30 minutes and remove to insert popsicle sticks. Return to freezer and freeze until solid.

*If you prefer a different herb, try basil, rosemary, lavender or mint.

Yields: 4-6 Servings
