Savory Stuffed Mushrooms

24 fresh medium mushrooms

1 cup (2 sticks) butter

6 tablespoons finely chopped green pepper

6 tablespoons finely chopped onion

3 cups fresh sliced bread cubes (1/4 inch)

2 teaspoon salt

1/2 teaspoon ground black pepper

Dash ground red pepper

1. Preheat to 350 F. Clean mushrooms. Remove the stems fine; set aside.

2. Heat 3 tablespoons of butter in a large skillet. Saute mushroom caps, on bottom side only, 2-3 minutes; remove.

3. Arrange, rounded side down, in shallow baking pan.

4. Heat rest of butter in the same skillet. Saute chopped stems, green peppers and onion until tender, about v5 minutes.

5. Remove from heat. Stir in bread cubes and seasonings. Use to fill mushroom caps, mounding high in the center.

6. Bake 15 minutes.

Yields: 12 Servings

* These are savory indeed. This is another one of my favorite recipe’s and a great appetizer. I have made them throughout the years at gatherings and everyone loves them, including myself.
