Homemade Fennel Sausage Patties

1 pound ground meat of choice (turkey, pork, chicken, lamb or beef)

1 small onion (or 2 shallots), finely chopped

1-2 cloves of garlic, finally chopped

1 teaspoon fennel seeds

1/2 teaspoon sage

1/2 teaspoon oregano

1/2 teaspoon salt

1/4 teaspoon pepper (black or white)

1/4 teaspoon red chili flakes

1 tablespoon olive oil (or other cooking oil)

1. In a large bowl, mix together ground meat, onion, garlic, fennel, sage, oregano, salt, pepper and chili flakes.

2. Shape the mixture into thin patties (about 2 1/2 inches in diameter and a 1/2 inch thick), making about 12.

3. Heat the oil in a frying pan over low to medium-low heat. Once the oil is hot, add the sausages; if the oil is not hot enough, the sausages will stick. You can do a test by putting a tiny pinch of the meat into the pan and see if it starts to sizzle.

4. Fry the sausages slowly, making sure they are well browned on one side before flipping them over. Depending on your pan, this will take about 7 minutes per side to cook throughout.

5. Transfer them to serving plate.

*These are healthier than processed breakfast meats, which usually contain sugar and preservatives.
