Honey Peanut Truffles

1 cup of rolled oats

1/2 cup peanut butter

1/4 cup honey

1/4 teaspoon sea salt

1/2 cup semi-sweet chocolate chips, melted

1. In a food processor, grind the oats until they are very fine. Add the peanut butter, honey, and salt, and blend until well combined. Line a baking sheet with parchment paper, scoop out teaspoon sized balls of the peanut butter mixture, and place on sheet. Place sheet into refrigerator for 1 hour.

2. Place chocolate chips in microwave safe bowl and microwave for 15 to 20 seconds, or until chocolate is melted. Mix chocolate until smooth, and then remove the baking sheet from the refrigerator. Drizzle the chocolate over the truffles or dip the truffles halfway into the chocolate. Place truffles back into the refrigerator until chocolate is set.

Yields: 16-20 Servings
