4 tablespoons unsalted butter
1 tablespoon white vinegar
3/4 cup hot sauce
1 teaspoon cayenne pepper (optional)
4 cups olive oil
2 lbs. chicken wings
1 cup cornstarch
Salt, to taste
1. Place the butter in Dutch oven and warm over medium heat. When it has melted, whisk in the vinegar, hot sauce, and cayenne (if using), making sure not to breathe in the spicy steam. Transfer the sauce to a mixing bowl and cover to keep warm.
2. Wipe out the Dutch oven, add the olive oil, and slowly bring it to 375 F over medium heat. While the oil is heating, pat the wings dry, and working in batches, toss them in the cornstarch.
3. Add the coated wings to the oil in batches and fry until they are crispy, about 10 minutes. Transfer the cooked wings to the spicy sauce, toss to coat, and serve them with Blue Cheeses Dressing.
