Fruit Kabobs With Pineapple Dip

30 seedless green grapes

30 pineapple chunks, about 3/4 inch each

30 mandarin orange segments

15 strawberries, cut in half

Place any combination of 4 pieces of fruit on plastic or wooden picks. Serve with pineapple dip.

Servings: 30 appetizers

Pineapple Dip:

1 package (8 ounces) Neufchatel cheese, softened

1 cup nonfat plain yogurt

2 tbsp. honey

2 tsp. crushed ginger root

1 can (8 ounces) crushed pineapple in juice, drained

1. Beat cheese, yogurt, honey and ginger root until creamy.

2. Fold in pineapple, cover and refrigerate at least 1 hour.

Servings: 3 cups
