Delicious Low Calorie Rice Pudding

2 egg whites

1 egg

2 cups cooked rice

1/2 cup sugar (you may substitute with 1/3 cup Stevia)

1/2 cup raisins

2 cups skim milk

1/2 teaspoon vanilla

1/4 teaspoon ground cardamon

1. Heat oven to 325F.

2. Beat egg whites and egg in ungreased 1 1/2 quart casserole. Stir in remaining ingredients.

3. Bake uncovered 50-60 minutes, stirring after 30 minutes, until knife inserted half way between center and edge comes out clean.

4. Serve warm or cold. Immediately refrigerate any remaining pudding.

*Sift cinnamon for topping if desired
