Chocolate Snowball Cookies

1 cup unsalted butter, at room temperature

1 1/2 cups powdered sugar, divided

1/4 cup cocoa-powder

1 teaspoon pure vanilla extract

2 cups all-purpose flour

1/2 teaspoon salt

1. Preheat the oven to 350 F. Prepare two baking sheets lines with parchment paper or a silicone sheet.

2. In a mixing bowl, add the butter, 1/2 cup powdered sugar, cocoa and vanilla. Mix with an electric mixer until fluffy. Add the flour and salt and mix until the dough comes together. Let the dough cool in the refrigerator for at least 30 minutes.

3. Scoop 1 tablespoon of the dough and roll around in the remaining cup of powdered sugar then place on the prepared baking sheet. Bake for 10-12 minutes and then let cool on the cookie sheet for an additional 5 minutes before transferring to wire rack to cool completely.
