1 1/3 Mascarpone cheese
1/2 cup Ricotta cheese
1/2 cup powdered sugar
1 teaspoon pure vanilla extract
2 tablespoons brewed espresso
1 teaspoon fine espresso powder
2 tablespoons Kahlua
1 teaspoon cocoa powder
1/2 cup semi-sweet chocolate chips (chopped)
Ladyfingers and/or fruit of choice, to serve
1. In a stand mixer, beat together the cheeses, sugar, vanilla, brewed espresso, espresso powder and Kahlua until thoroughly combined.
2. Place in a serving dish, dust with cocoa powder and sprinkle with the chocolate chips. Place in refrigerator until chilled. Serve with ladyfingers and/or fruit of choice.
