1 1/2 cups uncooked penne
2 tablespoons olive oil
1 cup broccoli, chopped into small florets
1/2 cup snow peas
1/4 teaspoon crushed red pepper flakes
1/4 cup chopped chives
1 tablespoon of sprinkled Feta cheese or cheese of choice to your tasting (optional)
1. Boil pasta in salted water according to package directions, strain and set aside.
2. In a medium skillet, heat olive oil over medium heat. Add broccoli, snow peas and red pepper flakes. Toss and heat the vegetables quickly for about 4 minutes. They will still be crunchy. Remove from heat.
3. Divide cooked pasta between 2 small bowls. Top with warm vegetables and chopped chives.
4. Garnish with cheese.
