Carrot Cake Macaroons

1 1/2 cups finely grated unsweetened, dried coconut

1/4 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon allspice

1/4 teaspoon nutmeg

3 large eggs

1 banana (or omit and increase the apples to 2)

1 apple, grated with skin

1 small carrot, grated (about 3/4 cup)

1/2 cup raisins

1/3 cup chopped walnuts (optional)

1. Preheat the oven 350 F.

2. In a small bowl, mix the coconut, salt, baking soda, baking powder, and spices.

3. In a larger bowl, beat the eggs and mash in the banana.

4. Add the dry ingredients to the wet ingredients, stirring until combined.

5. Add the grated apple, carrot and raisins.

6. Line a large baking sheet with parchment paper.

7. Using two soup spoons, transfer the batter onto the parchment and shape in slightly raised mounds, approximately 2 inches in diameter.

8. Bake for about 10 minutes, until deep, golden brown. Allow to cool before removing from the parchment.
