5 cups chopped ripe tomatoes
1 cup chopped onions
1/2 cup chopped fresh basil
1/4 cup red wine vinegar
2 tablespoons olive oil
3 garlic cloves, minced
1 teaspoon granulated sugar
4 1/2 ounces uncooked angel hair pasta
12 ounces grated part-skim mozzarella cheese
1. In a large bowl, combine tomatoes, onions, basil, vinegar, oil, garlic and sugar; stir to mix well. Cover with plastic wrap; let stand at room temperature at least 4 hours.
2. Meanwhile, in a large pot of boiling water, cook pasta 2 minutes, until tender; drain. Transfer pasta to large bowl; top with prepared sauce and cheese. Gently toss to mix well.
