1 pound medium shrimp (peeled)
1 tablespoon cornstarch
2 1/2 tablespoons canola oil
1/4 cup green onions (sliced)
2 teaspoons peeled ginger (minced)
3 garlic cloves (thinly sliced)
2 cups broccoli florets
1/4 cup low sodium soy sauce
2 tablespoons rice vinegar
1 teaspoon honey
1/8 teaspoon crushed red pepper flakes
1. Combine shrimp and cornstarch in a medium size bowl. Toss to coat.
2. Add 1 tablespoon of oil to a large pan and swirl to coat. Heat pan over high heat. Add shrimp, cook for 4 minutes. Remove shrimp from heat and place in a medium size bowl.
3. Add 1 1/2 teaspoons oil to pan. Add green onions, ginger, and garlic, cook 30 seconds to 1 minute. Add mixture to bowl with shrimp.
4. Add 1 tablespoon of oil to pan. Add broccoli and cook 1 1/2 minutes.
5. Stir in shrimp mixture and all remaining ingredients. Bring to a boil. Cook 1 minute or until broccoli is crisp and tender.
6. Serve and enjoy.
