2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup butter, softened
1 1/2 cups white sugar
1 cup canned pumpkin puree
1 egg
1 teaspoon vanilla extract
Icing:
2 cups confectioners sugar
3 tablespoons milk
1 tablespoon melted butter
1 teaspoon vanilla extract
1. Preheat oven to 375 F.
2. Place the flour, baking powder, spices and salt into a food processor and pulse a few times to combine. Add the butter and pulse until the dry ingredients and the butter are combined. Cut the butter into dry ingredients with a pastry cutter. Drizzle in the pumpkin and pulse(or stir) just until the dough comes together. Do not over mix.
3. Using a regular tablespoon, or large spoon, drop spoonfuls of the mixture onto baking trays and bake until golden brown, about 20 minutes.
4. Let cool in the pan 30 minutes before topping with icing.
